I have a dilemma.
I have a new found love for the taste of cake batter.
I have always loved Bruster’s Cake Batter ice cream but you know that must have like a bazillion Weight Watchers points plus per cup. So…I am on a mission to find some healthy cake batter flavor treats. I think I found a winner.
I shared with you an amazing recipe from Chocolate-Covered Katie before when I shared her mint pie recipe. I have been wanting to try another one of her recipes and when I saw this one, I was like, “Um…cake batter…yes!”
I had to go out and purchase Cashew Butter so I started with Trader Joes. No luck. I ventured over to Whole Foods because I knew they would have it (they have everything!). Sure enough, got it.
Came home that night and made them.
So…how do they taste?!?! Is it like cake batter energy bar nirvana?!?
Um…these are similar to a rice krispie treat with more sweetness. The cake batter flavor is still out for verdict. I thought they had a hint of cake batter and my husband said “Not so much!” However, we both really enjoyed them. I could see us using these for a quick breakfast on the run or an afternoon snack.
Each bar is 4 Weight Watchers Points Plus whether you use regular Rice Krispies or Frosted (we used frosted just because that is all we had!).
I actually doubled the recipe to fill the 9 x 9 pan I had. So, instead of 6 delicious energy bars, I now have 12!! YEAH!
