Tell us a little about yourself, your family, your job, etc…
I am a learner at heart who loves finding new recipes & exercises to try. I have a master’s degree in nonprofit management and in addition to fitness & nutrition, I am passionate about helping others figure out who they are and what they should do with their life.
I am married to my high school sweetheart, Greg.
We just celebrated our 20th anniversary, and I can’t imagine life without him.
In my free time, I love to read, be outside, and wakeboard!
How long did it take you to get to your ideal weight? Are you there now?
I am about 2 lbs away from my final goal. It has taken 2 years to get there – mainly because the first year I was not all in with my lifestyle changes. This past year I tried to make my lifestyle changes realistic while still making sure I was moving towards my healthy lifestyle goals and weight.
What was your motivation to lose weight?
Bottom line: be healthier. Plus, who can afford to buy new clothes every time they gain weight!?
What made you decide to start your weight loss journey?
I was tired of filling the voids in my life with food.
What kept you on track losing weight?
Using My Fitness Pal, time with God, adjusting my mindset, and focusing on how a healthy lifestyle made me feel!
Tell us about a typical day in terms of eating and exercise.
Hard to say a typical day in exercise, I like variety, but my favorite days are my strength training days.
A typical day of eating includes lowfat, low calorie breakfasts like protein pancakes. For lunch, I love salad (my current obsession is Mason Jar Salads). Dinners include a lean protein such as chicken breasts or a turkey burger, a veggie (we roast veggies regularly), and a high fiber carb like brown rice or quinoa.
How do you keep the weight off in order to maintain a healthy lifestyle?
I plan healthy meals for the week, I track what I eat, and I look back on the week to hold myself accountable.
What is the biggest difference you have noticed because of your weight loss?
Freedom – there is freedom in the discipline of eating healthy.
Also, how I feel. When I eat healthy foods and the right amounts, I am energized by my meals and don’t feel the blahs or bloating or misery or guilt.
What advice can you give to others struggling to lose weight?
There is a spiritual and emotional link to what we eat and how we take care of our bodies. It is important to figure out what is at the root of this part of our lives, so that we can eat to live, not live to eat.
Give us a quote or a motto that you have used to keep you focused.
I want to live life young at heart, mind & body.
Amazing job, Liz. Thank you for sharing your story with my readers. I love that you are so committed to helping others. You are so beautiful inside and out and this world is lucky to have people like you!
