Quick and Easy Weeknight Meals – Weekly Weigh In

Well people…I am a day late and a dollar short.  Wait, I take that back.  I am more like a week late and lots of dollars short but who’s counting?!?

Last week, I did so much better with planning, eating and working out.  I was so happy with myself until the weekend hit.  I don’t know what it is about the weekend but it is a free for all!  Stress + the cutest three year old ever + chocolate and ice cream = free for all.

Then, to make it all better, I woke up this morning with a super bad sore throat and as the day progressed, so did my headache.

Good news is I can sit down and talk to you guys and tell you about last week’s meeting topic and weigh in.  Bad news is I am NOT at Crossfit and I am not headed to my meeting in an hour.  Bummer.

So, let’s talk about my weigh in at Weight Watchers last Monday night, shall we?

You can’t really tell from the picture but I pretty much flatlined from the three weeks prior when I weighed in last.  I was shocked.  I expected a gain and I deserved a gain but for some reason, it was a flat line.  I will take it.  Kyle, who weighed me in said to be super careful this week because bad weeks tend to creep up on you when you least expect them.  Well, unfortunately I didn’t take her advice.

Well, I guess I could have but it was super good!

Now, I won’t get to weigh in tonight to see how I did but maybe tomorrow night or one night this week I will sneak into a different center to face the scale.

The meeting topic last week was perfect for this time of year.

It was all about quick and easy weeknight meals that are still healthy.

This time of year, it is crazy town.  I know it is in my house and we don’t even have children – can’t imagine what life would be like if we did!  We are running here and there and everywhere with little time to cook or do much of anything else.

When thinking of planning and staying on track, the biggest thing to remember is TO PLAN.  I know for me, if I don’t have a plan, I hit the drive through.

Some of my quick and easy meals that I love are actually pretty simple.

We love skillet chicken.  All you do is take a chicken breast, season it with seasoning salt and pepper and put it in a hot pan with a little oil in it.  Season the other side and flip.  Halfway through cooking, butterfly the breast and put the uncooked middle on the hot pan.  It cooks in seriously less than 10 minutes and the chicken is so juicy and flavorful.

We also love Jennie-O Extra lean turkey burgers with some sweet potato fries.  Again, super easy and fast and still Weight Watchers friendly!

You also can’t go wrong with fish.  Fish is super easy and FAST to cook plus Salmon (my favorite) is full of good fats!

Again, I cannot stress to you enough how important it is to have these meals in your house.  They must be easy and accessible.

I have done this several times in the past and we LOVED the meals that we ate.  Plus, we got the items on sale at Publix so it was even better.  Oh…and that whole planning thing was done for me so all I had to do was shop and cook.  I can handle that!

    Caprese salad with chicken – if you already have the chicken cooked it takes less than 10 minutes to throw together!!

    Silly question, but how do you butterfly the chicken breast?

      No question is a silly question (spoken from a true teacher!)…just turn the breast on its side with tongs and using a sharp knife, cut the breast in half but not all the way through. It will be able to lay almost flat but each half will still be in tact! Thanks for asking. I am sure others have that same question!
