Skinny Pumpkin Pie Latte…Mmmmm

A month ago at my cousin Aaron’s wedding, we had some time to kill between the wedding and the reception so we walked around Downtown Wilmington.  We stopped in this cute little coffee shop and I ordered a skinny pumpkin pie latte.  It was so good!  My husband tried it and liked it so much that he ordered one for himself.

After we got home, we were both talking about how good that drink was and thought we would try the one at Starbucks.  Starbucks has a pumpkin spice latte so we ordered that.  Blah…no thanks.  It was not good at all!  It left a terrible after taste and just wasn’t as good as the original.  Then, just to be fair, we tried the Pumpkin Spice latte at Dunkin’ Donuts.  Better than Starbucks but still…no good.   Maybe it was because they were missing the “pie” in the latte.  Maybe spice isn’t as good as pie?  Well…that makes sense.

I was now on a mission to try and find a drink as good as the one we had at the coffee shop in Wilmington.  I did what most people would do…googled it!  First, I googled pumpkin pie latte.  Not good results.  Then, I googled pumpkin pie latte recipe and found a few recipes.  The one I liked the best was from Taste of Home.  Just a few tweaks and I had a fabulous drink, better than both Starbucks and Dunkin’ (and a WHOLE lot cheaper!)

Skinny Pumpkin Pie Latte

In a saucepan, combine one cup of skim milk, 1 tbs. of pumpkin (I use Libby’s), and 1 1/4 tbs. of Splenda

Heat and stir until steaming.

Take mixture off the heat and add 1/4 tsp. of pumpkin pie spice and 1 tbs. of vanilla.

Pour into a blender and blend until frothy.

Pour into a mug and top with 1/4 cup of strong coffee or espresso.

Top with fat free cool whip and sprinkle with pumpkin pie spice.

Serves:  1

Weight Watchers Points Plus:  2 points plus if you do not count the pumpkin since it is a vegetable

3 points plus if you do count the pumpkin!

Compare this to a Starbucks talle:  5 points plus

    Oh wow. Just came in from walking my dog (it’s super cold outside!) and made one – absolutely fantastic! Really does taste like pumpkin pie, but a whole lot cheaper in pointsplus!!! Thanks for sharing!

    Just made this to take into my hot tub (30 degrees here in New England!).  So yummy!  I think that 1 Tbs of vanilla was a bit much for me (tasted a little alcohol”y”).  It could have been me…maybe a little heavy handed!  Super easy and so yummy!!!  Thanks!!!!!!!

      I’m so glad you liked it. I had a pure vanilla from a cruise I went on so there wasn’t the alcohol taste. Definitely cut back if it tasted too much like vanilla! I need to work on a skinny peppermint mocha now!
