Low Fat Chocolate Cupcakes – Recipe

I love chocolate.  I love Fiber One Brownies, I love chocolate brownie muffins, I love ALL things chocolate.  So, when I saw a new recipe from Skinny Taste, I had to try it.

This weekend was the perfect time to try them out because I was going to have a bunch of people over for a bonfire and 24 cupcakes in my house with just me and the hubs is VERY dangerous for both of us.  So, I made them, tried to keep it a secret that they were healthy and passed them out.  At 2 Weight Watchers points plus, you can’t beat these!  The verdict…

EVERYONE LOVED THEM!!!!

When I say everyone, I mean everyone!  Even the picky eaters!  So, without further adieu…the recipe!

Chocolate Cupcakes

Ingredients:

  • 1 cup of Pumpkin (real pumpkin, not pumpkin pie filling) – I used Libby’s
  • Box of Chocolate Cake Mix ( I use whatever is on sale!)
  • Small box (1.4 oz) of sugar free, fat free instant chocolate pudding mix
  • 1 1/3 cups water

Preheat oven to 350 degrees and line a cupcake tin with cupcake liners.

Combine pumpkin and water and mix to combine.  Add the chocolate pudding powder and mix well.  Add chocolate cake mix and beat for two minutes on medium speed.

Fill cupcake liners 2/3 full.  Bake for about 25 minutes.  Cool in the cupcake pan.

Serving:  1 cupcake   Weight Watchers Points Plus:  2 points plus each cupcake

Now…if you want to get really fancy and yummy, drizzle a glaze over the top of the cupcakes.  Here is how you make the glaze:

Ingredients:

  • 1/2 cup confectioners’ sugar
  • 1 tbsp unsweetened cocoa powder
  • 1/2-1 tbsp 1% milk
  • 1/4 tsp vanilla extract
  • pinch of salt

Combine all dry ingredients, add vanilla, 1/2 tbsp of milk, adding more milk 1/4 tsp at a time if needed until the glaze is smooth.  Place glaze into a ziplock bag, cut off one corner and drizzle over the top of the cooled cupcakes.

If you choose to use the glaze, each cupcake is 3 points plus instead of 2.

    These really are great, our granddaughter baked them for a family dinner this past weekend and everyone loved them even the people who aren’t watching their weight

    I just left my WW meeting and came home and made these.  They are fantastic and so moist.  What a way to start out a new week.  These are definitely a DEAL in my new Deal or No Deal attitude with food.

    Do you make the cake batter and pudding? or do you just add the powder mix and mix it with the water and pumpkin?

    You can also do a really good lowfat cupcake with just the chocolate cake mix and 1 Coke Zero, just kix and bake. In the fall a great cake flavor to mix with the pumpkin is the spice cake mix. love your site!
