Weight Watchers has come out with two new cream cheese flavors.
and Chocolate Raspberry.
Have you ever heard of making a cake or cupcakes with diet coke? I was skeptical to try it because it just sounded weird. I finally took the plunge and made them.
The results were amazing. I used Diet Cherry Coke and chocolate cake mix. They were delish!
Then, just to make them REALLY good, I made some cream cheese frosting with the new Weight Watchers Raspberry Chocolate Cream Cheese.
O-M-G! They were over the top. My husband LOVED them and devoured a few at a time! Be careful because they are rich even though they are light!
This recipe is so easy it is crazy! You probably have all the supplies on hand. Make this…NOW!
Diet Coke Cupcakes with Cream Cheese Frosting
Points Plus: 3 Weight Watchers points plus
- 12 oz. diet soda of your choice (cream soda has the most “neutral” taste but I liked Diet Cherry Coke)
- 1 box cake mix of your choice (I used Devil’s Food)
- 10 oz container of Weight Watchers Cream Cheese (any flavor of icing you would like)
- 6 0z. fat free Cool Whip
Mix cake mix with 12 oz Diet Soda. Just mix until combined. It will be bubbly at first but will totally settle down and look like the regular consistency of cake mix after a minute of mixing.
Pour into cupcake pans sprayed with cooking spray or lined with paper liners.
Bake according to the package directions for cupcakes (You could also make a cake by pouring into a 9 x 13 pan and baking according to package directions!).
Cool cupcakes completely before frosting.
For frosting, mix the container of Weight Watchers cream cheese with 6 ounces of Fat Free Cool Whip.
Put into a zip-lock bag, cut a slit in the corner of the bag and pipe the frosting onto the cupcakes.
